In accordo, we aim to promote recipes, tastes and flavours that have been melded in the Corfiot tradition by people of different cultures, who lived in the island the last millennium until the union with Greece in 1864, Byzantines, Anjous, Venetians, French and English. In Corfu, food recipes are identified by their cultural origin. Corfu was under Venetian administration for 411 years, 11 months and 11 days and food recipes in the town of Corfu are almost identical with the Venetian food recipes.
The traditional food recipes, in Corfu, follow the Mediterranean tradition; they use olive oil as a basic ingredient, lots of vegetables and pastas which are accompanied with various aromatic herbs, like: garlic, parsley, sweet and hot red peppers, cinnamon, cloves, allspice, nutmeg and ginger. For making the traditional sweets, the quince and the bergamot were mainly used.
We are searching forgotten tastes and exploring old forgotten food recipes, we are using organic and natural produce (cultivated and wild fruits and vegetables) mainly from Corfu – lots of wild aromatic herbs, pure honey, orange blossom honey and sage (salvia) honey, local wine without any additives or preservatives, pure vinegar from wine, organic cane sugar, extra virgin Corfiot olive oil and pure sea salt.
All our products are homemade, of high nutritional value and part of current approaches in healthy eating.
